Modified atmosphere packaging (or fresh-locking packaging) is a gas-proof material that seals meat food under a changing gas environment to inhibit the growth, reproduction and biochemical activity of spoilage microorganisms and prolong shelf life. He is usually presented by Map Trays and Lidding Film It consists of two parts. The Evoh Map Packaging Tray released by Tipack is a high-barrier MAP Tray, which should be used together with the oxygen-barrier MAP Tray Lidding Film to improve the high-barrier properties of both.Modified atmospheric packaging gases are typically carbon dioxide, oxygen, and nitrogen, or various combinations thereof. In order to preserve meat for a long time, the three gases must be maintained in the proper ratio. The preservation effect of each gas on fresh meat is as follows:
(1) Oxygen can maintain the brightness of the muscles, and the oxygen in the mixed gas can only keep the meat bright red when it is higher than 50%.
(2) Carbon dioxide is colorless and odorless, and mainly plays a bacteriostatic effect in inflatable packaging. It can inhibit the oxidative rancidity of meat and the growth of fungi.
(3) Nitrogen is widely used in inflatable packaging, with stable properties and no effect on meat color and microorganisms. Mainly used as filler.
Modified atmosphere packaging storage methods should consider storage temperature, packaging materials, deoxidizers and ethylene adsorbents. Experiments and predictions showed that the effect of the pore area of the packaging film on the oxygen concentration was much greater than that on the RH, which made it possible to adjust the RH in the packaging bag to reduce fruit weight loss and maintain the minimum gas content required for mango physiological activity. The model addresses the effects of oxygen concentration, RH and packaging film parameters on MAP storage. The optimal oxygen concentration and RH value are provided for the storage of MAP. In addition, 0.06mm thick polyethylene bags are used for packaging and sealing, and appropriate deoxidizers and ethylene adsorbents are added to the bags, so that the oxygen concentration is 3%-5%, and the CO2 concentration is 2.5%-5%. Keep it fresh for about 30 days at 10-12°C.
